As the weeks continue to roll by in the Bread Baker's Apprentice Challenge, something surprising has happened: I am starting to enjoy baking bread. That's right, what I thought was impossible is now occurring. A lesson in dough arrives each week and through continued learning my bread baking fear is slowly slipping away.
The recipes in The Bread Baker's Apprentice
are clearly written with a reassuring voice that instills confidence in a novice bread baker. An even greater benefit is that they are absolutely delicious. Our weekday mornings have been transformed from a rut of cereal or eggs into an ever changing rotation of freshly toasted bread. Because things have been going so smoothly I don't have any crazy stories to share, but thought instead I would pass along photos of the most recent successes. (Since the challenge is to bake through the entire book, participants are respecting the author and not posting any of the recipes online.)

I can't do this. Not because I'm afraid of yeast (although we do have a rather contentious relationship), but because if I was baking these things, I would be eating large quantities of them and would end up weighing 300 pounds. I have no control around bread of any kind.

How impressive is that?!?!?!? I can't do bread...I just never make anything that I think I can buy a better version. Having lived in NYC and LA--the bread thing has just passed me by. Wondering...is that just a bad excuse?
Gorgeous breads. I'm drooling over those cinnamon raisin buns. My favorite so far were the sticky buns. I'm pretty sure I died and went to heaven, if only for a little while, when I ate them.
I am just drooling over the beautiful crumb on your ciabatta bread. And the picture of the sticky buns is quite arresting too!
I'm not afraid of working with yeast. I'm just afraid that it will permanently cling to my "behind"! I could eat fresh baked bread any day. As for cinnamon rolls-- Lord, give me strength! I've bookmarked this book as my next "wish list" item on Amazon. I tried to get it from my library, but I'll have to wait until the next millenium to get it. Beautiful job, is all I can say. How I wish I could just have one gooey center of those cinnamon rolls. I'm having food envy.

Thank you everyone! Oscar has been enjoying lots of fast bike rides with me this summer to help keep the sticky buns from 'sticking around' too long! I'm afraid after this year I'll never be able to go on a low-carb diet again...
Sam- The secret to the hickory smoke was to take the cornbread out of the oven about 5 minutes early, and finish it on top of a grill with hickory chips in the charcoal. It infused the bread with a sweet smoky flavor that was out of this world good. I can't wait to do it again.

Those are impressive looking breads and beautiful pictures! I have the book, but am scared after a couple of flops so far... how many times before real bread? I'm just lucky we can get beautiful ciabatta easily where I live.
Foodhoe- I had at least five flops before my bread started to turn out. Four were recipes outside of the book, and the fifth was my first recipe from the book. Why don't you pick a recipe from near the beginning of the book and the jump onto to Twitter (#BBA) with any questions. I was delighted the second time around when I could get almost instant answers to my basic questions from the book. It was almost like having someone looking over my shoulder!
